I’m not a football fan, but I do enjoy all the food and snacks each year during the Big Game. This Veggie Pizza Appetizer is a lighter choice among all the fried fare and other junk food that’s popular during the biggest weekend in football.
This is also a good choice any time you need an appetizer. I like to take it to church potluck dinners or to parties, and there usually isn’t much left over.
The other nice thing about this recipe, besides the fact that it’s a good way to eat veggies, is that it is versatile. You can put whatever veggies you like on it, and leave off anything you don’t like. It’s an easy dish to customize according to your preferences.
Veggie Pizza Appetizer
2 packages refrigerated crescent rolls
1/2 cup mayonnaise
1/2 envelop Ranch dressing mix
1 8-ounce package cream cheese
Handful of shredded cheese, any variety
Chopped veggies (broccoli, cauliflower, bell peppers, onion, green onion, carrot, zucchini, tomato, radish, etc.)
Roll out crescent roll dough and press it down into a baking pan with sides. Heat oven to 350 degrees and bake for 10 to 12 minutes. Allow crust to cool. Meanwhile, blend mayonnaise, Ranch dressing mix, and cream cheese. Spread the mixture over the cooled crescent roll crust. Arrange chopped vegetables on top and sprinkle with cheese. Refrigerate until ready to serve. Cut into squares before serving.
